▪️ slice the avocado and quarter the tomatoes, then place in a salad bowl with a quarter of the spinach. slice and add the spring onions and pick in the coriander.
▪️ Crack the egg into a blender, add the flour, baking powder, milk, remaining spinach and a pinch of salt and pepper, then blitz until smooth. Place a large nonstick frying pan on a medium heat, rub the pan with a little olive oil, swirling it up and around the edges. Cook on one side only for 2 minutes, or until lightly golden, then stack up on a serving plate and repeat.
▪️ Top each pancake with cottage cheese, the avocado salad, and a few good shakes of chili sauce. Really nice served with extra lime wedges for squeezing over.

▪️ Half a cup of cooked quinoa
▪️green arugula
▪️ a cup of lettuce
▪️6 cherry tomatoes

▪️ Pomegranate text (optional)

Sauce Ingredients:
▪️Lemon juice as desired
▪️ 1 tablespoon of pomegranate molasses
▪️ salt
▪️ olive oil
▪️ rinse the quinoa under running water for a minute or two. In a medium-sized pot, combine the rinsed quinoa and 1 cup water. Bring the mixture to a gentle boil, then cover the pot, reduce heat to a simmer and cook for 15 minutes. Remove the quinoa from heat and let it rest, still covered, for 5 minutes.
▪️ drain off any excess water and fluff the quinoa with a fork. Set it aside to cool.
▪️ Bring a pot of water to boil, then add the frozen edamame and cook just until the beans are warmed through, about 5 minutes. Drain and set aside.
▪️ Using a knife cut the carrot and beet into small pieces.
▪️ To prepare the vinaigrette, Whisk together all of the ingredients until emulsified.
▪️ In the serving bowel combine all the ingredients together, then add the vinaigrette and season it with salt and pepper.
▪️3/4 cup (120 g) whey protein powder unflavored or vanilla
▪️2 tsp baking powder
▪️1 tsp pure vanilla extract
▪️1/4 tsp cinnamon
▪️2 bananas
▪️Cooking spray (vegetable oil)
Instructions
▪️In a blender, add eggs, protein powder, baking powder, vanilla extract, cinnamon and bananas. Process until smooth. Batter will be on a runny side.
▪️Preheat skillet on low-medium heat and spray with cooking spray or add oil. Pour a bit less than 1/4 cup batter, cook until bubbles just start to appear on top, flip and cook for another 10 seconds.
▪️Serve with yogurt, berries, maple syrup and any of your favorite toppings.
